I can't remember who originally posted this but it's a delicious sandwich filling, even with no butter or spread on the bread.
Grated carrot and cheese - one third cheese, two thirds carrot (one quarter cheese still tastes good)
Bind together with a little salad cream.
I like to add black pepper and horseradish is good to bind as well. I also like it with beetroot but it's a bit messy, a surgical glove is useful for the grating!
